Hello everyone, happy June! I am so happy to say that I am going to be continuing to create lots of seasonal recipes for you which I am so happy about and we are starting with June!
June is such a wonderful month for produce in our beautiful country. From the first picking of strawberries and raspberries to rhubarb being bang in season, we have so much to choose from. The problem is just picking 3 recipes to make for you all. Did you know that the 5th of June is national sausage roll day? As if we need an excuse to eat sausage rolls.
So how about we start with something sweet that will be perfect for sitting down and watching Wimbledon with. I was thinking how does a vanilla custard tart with strawberries sound? Crisp, golden pastry meets creamy vanilla custard and then we top it off with freshly picked strawberries and a dusting of icing sugar! I have used a bought pastry case as, let's be honest, the summer is too hot to be making pastry and this guarantees you won’t have a soggy bottom! Now I think we need something savoury to balance out the sweet.
How about my new potato salad that is packed full of seasonal ingredients such as spring onions and chives. This isn’t any old potato salad though. Oh no, this is the BEST potato salad. The addition of crispy pancetta and my lemon mayonnaise make this unbelievably delicious and just perfect for those early summer evening BBQs. Now I think we should go back to sweet, don’t you? I thought how about my raspberry and chocolate ice cream slice? Raspberries are in season now and we all know how perfect raspberries and chocolate are together so why not make them even better by adding ice cream too.
