The best new potato salad
Ingredients - serves 6
600g new potatoes-washed, cooked and cooled
250g pancetta-cooked crispy and cooled
5 spring onions
Bunch fresh chives
4 tbsp mayonnaise
1 small lemon-juiced
½ tsp Dijon mustard
Salt and pepper
Method
To make this delicious summery potato salad, quarter the potatoes and set aside. Place the mayonnaise in a large mixing bowl and mix it together with the lemon juice, Dijon mustard and chopped chives, but save some of the chives and spring onions to decorate. Now mix in the pancetta and chopped spring onions and season well with salt and pepper.
Gently stir through the cooked and cooled potatoes so you don’t mash up the potatoes too much. Place the potato salad into a serving bowl and sprinkle over the remaining chopped chives and spring onions. Serve as a delicious side and enjoy.
