The Cheesiest Whole Baked Cauliflower Cheese
Ingredients - serves 6
1kg whole cauliflower
2 tbsp butter
2 tbsp plain flour
500ml warmed whole milk
1 tsp grated fresh chilli pepper
250g extra mature cheddar
1 large tsp Dijon mustard

Method
To make this delicious cauliflower cheese, bring a large saucepan of water to the boil. Remove any big leaves off the cauliflower but leave the smaller ones attached. Carefully place the cauliflower into the water and cook for ten minutes, then drain off the water and set aside in a large roasting dish. Preheat your oven to gas mark 4/160c.
Now melt the butter in a medium saucepan and stir in the flour, then cook the roux out for one minute. Momentarily remove from the heat and gently whisk in the warmed milk until smooth. Now mix in the mustard and chilli. Place the saucepan back on the heat and bring to a calm boil, whisking regularly. Stir in all of the cheese except a small handful and whisk until the cheese has melted. Season to taste. Pour the cheese sauce over the cauliflower and sprinkle over the remaining cheese. Bake for around 30 minutes until golden brown and the cheese sauce is bubbling. Serve for a showstopping side.
