Mini Spiced Apple Lattice Pies
Ingredients - Makes 15
100g butter
200g plain flour
65g caster sugar
2 egg yolks
2 large bramley apples
1 tbsp dark brown sugar
2 tsp ground cinnamon
Method
Preheat your oven to gas mark 4. Peel, core and dice the apples and place in a saucepan with the sugar, cinnamon and a little water. Stew until all the liquid has been absorbed and the apples are tender. Cream the butter and sugar together, then stir in the flour. Add the egg yolks and mix well, then form into a ball of dough. Roll out onto a floured work surface.
Cut out 15 circles using a cookie cutter and then cut out strips the same size as the muffin tin hole to form your lattice tops. Place into 2 muffins tins. Fill each pastry circle with the apple filling, then top with your lattice strips. Brush over a little melted butter and sprinkle over some caster sugar. Bake for 20 minutes until the pastry is lightly golden brown and cooked through. Sprinkle over a little more caster sugar after cooked, then leave to cool. Serve for a delicious tea-time treat.
