Beetroot and Seasonal Apple Salad
Ingredients - serves 6
3 large fresh raw beetroot, grated
2 large seasonal apples, peeled, cut into matchsticks and tossed in lemon juice
200g raw red cabbage, shredded
4-5 tbsp sliced pickled pink onions
Handful walnuts-chopped
3 tbsp apple cider vinegar
2 tbsp brown sugar
3 tbsp olive oil
1 tbsp Dijon mustard
Fresh parsley, chopped
Salt and pepper
Method
To make this delicious salad, in a large bowl mix the apple cider vinegar, brown sugar, olive oil, Dijon mustard, chopped parsley and season with salt and pepper. Stir well then add the grated beetroot, matchstick apples, shredded red cabbage, pickled pink onions and walnuts. Toss everything together making sure everything is coated in the dressing. Season with more salt and pepper if you want and then serve as a delicious side.
